Researchers Create Edible Cookies from Recycled Plastic, Awaiting Taste Test

A team of scientists at Southern Illinois University has successfully developed an innovative method to transform PET plastic waste along with plant materials into edible food components. The process begins with grinding plastic bottles and plant remnants, which are then subjected to a combination of water, oxygen, high heat, and pressure. This treatment breaks the materials down into carbon-rich compounds. Subsequently, specially modified yeast is used to convert these compounds into proteins, fats, and organic acids.

The next step involves adding starch, fiber, and a sweetener to this mixture, which is then processed using a food-grade 3D printer to create small protein-rich cookies known as µBites. To enhance the flavor, the researchers have also engineered baker's yeast to produce vanillin sourced from plant waste.

Although the scientists have praised the enticing aroma of the cookies, they have yet to sample them personally as they are currently awaiting approval from the university. Originally developed for NASA's Deep Space Food Challenge, the concept aims to provide food for extended space missions. While the technology is not yet ready for mass production—currently, a kilogram of these cookies costs about $60—the researchers are optimistic that prices will decrease as the production process scales up.
