Researchers in California have introduced Burger AI, an innovative artificial intelligence tool designed to craft new burger recipes by considering taste, nutritional benefits, and environmental impact, while also taking into account an individual's gender, age, and physical activity level. The AI algorithms were developed using data from over 2,200 burger recipes and 146 different ingredients. To assess the effectiveness of these AI-generated recipes, the researchers organized a blind taste test in a San Francisco restaurant, where more than 100 participants sampled five unique burgers created by the AI and rated them against the iconic Big Mac. Participants evaluated the burgers based on their overall impression, flavor, and texture. Remarkably, two of the AI-created burgers received ratings that were equal to or exceeded those of the Big Mac. One notable creation, a bean burger, achieved nearly double the nutritional score of the Big Mac, although it did not match in taste. Ellen Kuhl, the lead researcher for the study, stated, "For centuries, food design has relied on intuition, experience, and trial and error. We are starting to demonstrate that AI can convert food design into a quantitative science, with potential applications in other significant areas."
